Earth is the multicultural jewel of the United Planets, a world known for its diversity and culture. It's a place where people can find almost anything: any technology, any food, any style of clothing from any world. It's also a place people can learn about other species, from the planetary cultural centers that can be found there -- where aliens engage in cultural practices from back home and share them with others, to theaters and entertainment venues where music and entertainment events, to stadiums where people can catch alien sports like Magnoball, to museums filled with all different works of art from myriad worlds.
And if there is a city that best represents what Earth has to offer, it's New Metropolis, on the North American continent, where both Earthgov and the UP Council are located.

Dipper was quickly beginning to grow on Hiccup. Their senses of humor meshed fairly well at least, and Hiccup loved the chance for banter. There weren't all that many opportunities for it back home.
"I'm not sure I wanna know what that would actually look like. If I wake up screaming in the night? Then my subconscious figured it out and decided to torture me with it."

It was part of what had made his easy relationships in Gravity Falls with Wendy and Soos so novel.
How easily he was getting along with people in this place was blowing his mind a little.
"Only the raddest and the most 'dope' and 'slammin,'" said Dipper, shaking his head with mock sadness.

"So, is there anything else interesting in this tribute to mankind's slow decline you want to show me, or should we move on before we start speaking gibberish?"

He pointed to a somewhat cracked box with a glass screen in the front.
"Television! You know how the omnicoms can record and play video? Originally the only way they could play video was with these really big projectors they had to feed strips of film through that were packed into these giant circular reels, but then they eventually invented TVs so people could be mindless entertainment zombies in the comfort of their own homes."

That had a myriad of problems. There were too many times back on the Edge that they'd received information when it was too late to do anything about it.

Dipper suddenly realized that if they didn't have plastic yet, Hiccup probably didn't know what it was.
"I don't know if you've heard about them yet, but plastics are hard materials made from polymers. People take oil from deep inside the ground -- like the kind of oil you find in tar pits? And it has really rubbery qualities and they change it with lots of chemicals and it makes all different types of hard, durable material. Called plastic."
He pulls up his sleeve and shows off his plastic watch.
"They can be made to be a lot stronger than wood, glass, or even metal."

"We only just barely worked out what everyone here calls steel a while ago. And we only found out it even existed because Meatlug, my friend Fishlegs' Gronckle? Puked it up after eating a bunch of iron and rocks."

Seriously. Dragons barfing steel. That was cool and gross. It sounded like something Mabel probably would've been even more fascinated with than he was.
Mabel was the kind of person that that found things like mystical creatures barfing up precious substances delightful on occasion. It depended largely on the creature and the substance.
